Being on a student budget and a busy student lifestyle with working part-time as well as being a busy bee at University. I have to plan meals that are easy and uncostly. For meat, I tend to bulk buy chicken to then freeze into portions. This dish I used a portion of my chicken thighs that I defrosted on the day.
As well as this, ingredients I used were
- A whole chorizo sausage (Can get this fairly cheap from Aldi)
- 2 chicken thighs (with bones and skin)
- 3 large potatoes
- Orange zest
- Seasoning (including m&s chipotle and garlic mill- my favourite cupboard spice I own)
- -additionally, I sometimes use tomatoes (whole) and sliced onions. I just forgot about these additions this time.
All I then do is line the pan with foil (this just saves cleaning after) – but if I’m gonna be honest this just made the spuds stick to the foil.
Chop and peel potatoes, peppers, onions and slice chorizo into 4 cm cubes.
All thrown into the tray with a dash of oil (doesn’t need much as a lot of the good juices are produce
Cooked for roughly 30mins, until chicken juices run clear and the potatoes are crispy enough to your liking!
Note: this can also be done with chicken breasts(often done) but I tend to do it in a saucepan alltogether with a side of rice and excluding the potatoes.Just the breast tends to dry out from over cooking.
